Lima Bean Hummus

Ingredients
- 2 10oz boxes frozen baby lima beans
- 1 large onion, chopped
- 5 garlic cloves, smashed
- 1 1/4 tsp salt, divided
- 2 cups water
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh parsley, chopped
- 1 tsp ground cumin
- 1/4 tsp cayenne
- 3 Tbsp fresh lime juice
- 2 Tbsp evoo
- 2 Tbsp fresh dill, chopped or 1 tsp dried
- 2 Tbsp fresh mint, chopped

Step 1
Simmer beans, onion, garlic, 1 tsp salt and water in 3 quart sauce pan covered for 8 mins or unitl beans are tender. Stir in cilantro and parsley and let stand uncovered for 5 mins. Drain bean mix in a sieve and put in a food processor. Add cumin, cayenne, remaining salt, dill, mint, lime juice and oil; puree to smooth. Transfer to a bowl and cool to room temperature. Serve with Sesame Crisps, pita bread, naan, whatever you like.
