Ingredients
- 1/2 sweet onion, chopped
- 1 large scallion
- 1 tsp sea salt
- 1/2 tsp cinnamon
- 1/2 tsp coriander
- 1/4 tsp onion powder
- pinch of garlic salt and black pepper
- 3 tsp vegetable bouillon with 3 cups warm water
- 1 garlic clove, crushed
- 1 tablespoon butter
- 3/4 cup lentils
- 3/4 cup chopped tomatoes (I used canned)
- 1 medium yellow bell pepper
- 1 squash (zucchini)
- 1/2 tablespoon butter

Preparation
Step 1
Melt the tablespoon of butter then saute the garlic and onion with the lentils and salt.
Pour in the water/broth, then add the rest of the seasonings and the yellow bell pepper, also the tomatoes with some of the juice.
When the lentils are almost done, when the broth is almost gone, add the squash and the last bit of butter.
