Ingredients

  • 3 egg yolks, beaten
  • 3 egg whites beaten so they peak
  • 1 cup sugar
  • 2 tbsp cold water
  • 2 tsp baking powder
  • 1 1/2 cup sifted flour
  • 2 cup milk
  • 2 tbsp cornstarch
  • 2 eggs, well beaten
  • 1 cup sugar
  • 1/2 cup butter
  • 2 tsp vanilla

Step 1

1. Mix yolks and sugar and beat until smooth. Sift together the flour and baking powder; add the yolk mixture. Mix in water and fold in the beaten egg whites.

2. Pour into two greased 8" round pans and bake at 375F for 25 mins or until lightly browned. Split each layer while warm but not hot so that you have 4 cakes.

3. Make Cream Filling: add cornstarch to milk; add remaining ingredients and heat until thickened. Cool slightly and spread on warm cake. Sift powdered sugar over a paper doily. Lift off carefully so design shows through. Serve with fresh strawberries or blueberries or raspberries.
