Linguine with Zucchini and Cheese 0 Picture

Ingredients

  • 12 ounces Linguine pasta
  • 1 (26-oz.) jar spaghetti sauce
  • 1 tablespoon unsalted butter
  • 3 medium zucchini, thinly sliced
  • 1 cup chopped onion
  • 3 cloves garlic, pressed
  • 3/4 teaspoon dried basil
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded part-skim Mozzarella cheese

Preparation

Step 1

Cook pasta according to package directions. Meanwhile, simmer spaghetti sauce in a medium saucepan until heated through; set aside and keep warm. Melt the butter in a large skillet over medium-high heat; add zucchini, onion and garlic and saute until almost tender; add basil. Spoon pasta sauce, cheeses and zucchini mixture over hot Linguine; toss well to coat.


SERVING SUGGESTION: A big salad and some garlic toast.
