You can serve these vegetables over rice instead of rolled in tortillas.

Ingredients
- 1 Tbs. vegetable oil
- 1 Tbs. fresh lime juice
- 1 tsp. chili powder
- 1 tsp. dried oregano
- 1/4 tsp. ground cumin
- 2 large cloves garlic, minced
- 1/8 tsp. salt, or to taste
- 6 cups vegetables cut into strips (such as bell peppers, portobello mushrooms, zucchini, yellow squash, carrots, or eggplant)
- Eight 7-inch flour tortillas
- 1/2 cup salsa

Step 1
1. In a large bowl, stir together the oil, lime juice, chili powder, oregano, cumin, garlic, and salt. Add the vegetables and toss to coat; let marinate at least 1 hour.
2. Preheat the broiler. Line a pan with foil; cook vegetables until desired doneness, turning once.
3. Warm the tortillas on the grill or in the oven. Place 1/2 cup of the vegetables in the center of each tortilla, top each with 1 Tbs. salsa. Fold one side over the vegetables, then roll to form a tube.
VARIATION: Top vegetables with 2 Tbs. guacamole (you'll need 1 cup total for the recipe) before adding the salsa.
