Ingredients
- 1 pound 95% lean ground beef
- 1 cup diced onion 2 cloves garlic, pressed 1 (14.5-oz.) can low sodium diced tomatoes
- 1 (15-oz.) can black beans, drained and rinsed; or equivalent homemade
- 1 (16-oz.) package frozen whole kernel corn
- 1 cup sliced mushrooms
- 2 teaspoons chili powder
- 4 ounces low fat Cheddar cheese, shredded
- 1/4 cup low fat sour cream
- 1/4 cup chopped cilantro

Step 1
Heat a large skillet over medium-high heat; brown ground beef with onion and garlic; drain off excess grease. Add tomatoes, beans and corn; heat through. Add mushrooms and chili powder; cook until mushrooms begin to soften. Stir in cheese and sour cream. Serve topped with chopped cilantro.
SERVING SUGGESTION: Serve with warm corn tortillas; add a big salad tossed with Easy Balsamic Vinaigrette (see recipe).
