Ingredients

  • 2 medium cucumbers, peeled and thinly sliced
  • 1 tablespoon salt
  • 3 cups ice water
  • 4 scallions, thinly sliced
  • 1/2 small red bell pepper, chopped
  • 1/4 cup sour cream
  • 2 tablespoons white vinegar
  • 2 tablespoons sugar
  • 1/4 teaspoon black pepper

Preparation

Step 1

In a large bowl, combine the cucumbers, salt, and ice water.


Cover and chill for 1 hour, then drain and return the cucumbers to the bowl.


Add the remaining ingredients and mix until well combined.


Cover and chill for at least 2 hours before serving.


Notes
I like to peel the cucumbers for this salad, but you can also use them unpeeled or run a fork across the peels before slicing to give them a ridged look.
