Ingredients
- 1/4 c butter/margarine
- 1/2 c chopped onion
- 1/2 c coarsely chopped green pepper
- 1/2 c coarsely chopped carrot
- 3/4 c ketchup
- 1 c pineapple juice
- 2 T vinegar
- 1/4 c firmly packed brown sugar
- 2 t soy sauce
- 1/2 t garlic salt
- 1/2 t salt
- 1/4 t pepper
- dash ground ginger
- 1 c pineapple chunks, drained
- 1 (3lb) broiler-fryer chicken, cut up

Step 1
Preheat oven to 400*. In medium skillet, heat butter til melted, add onion, grn pepper & carrot and cook 5 min, stirring.
Stir in ketchup, pineapple juice, vinegar, sugar, soy, garlic, salt, pepper & giner. Cook stir constantly, until mix boils.
Arrange chicken pieces skin sid eup in 13 x 9 x 2 pan. Pour sauce over bake covered 45 min. Uncover and bake about 30 min longer, or until chicken tests done
