Ingredients

    lbs tripe

  • 1

    Can Broad Beans, drained

  • 2

    onions, chopped

  • 2

    stalks escallion, chopped

  • 1

    sprig thyme

  • 2

    tablespoons curry powder

  • 2

    tomatoes, chopped

  • Hot pepper

  • Black pepper

Directions

Wash tripe carefully the cut into small pieces. Place tripe in pot and cover with water. Bring to a boil, then lower heat and simmer until tripe is tender usually about 2 hours. Add the onions, escallion, thyme, curry powder, hot peppers and black pepper. Add water if necessary. Continue to simmer for about 6-8 minutes then add the broad beans and simmer for an additional 10 minutes. Gravy should thicken. Best served with steamed white rice.
