Ingredients
- 1 cup granulated sugar
- 1 3/4 cups shortening
- 2 large eggs
- 2 cups all-purpose flour
- 1/2 cup baking cocoa
- 1 1/2 tsps baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 1 tbsp plus 1 tsp vanilla
- 2 large egg whites
- 1 tbsp vanilla
- 1/4 cup whole milk
- 3 cups confectioner's sugar

Preparation
Step 1
1. Preheat oven to 350 degrees. Grease 2 baking sheets and set aside
2. Cream together sugar and 1/2 cup of the shortening. Add eggs and mix well
3. On a sheet of waxed paper, sift together flour, cocoa, baking soda and salt
4. Add to the wet ingredients, alternating with the buttermilk
5. Add 1 tsp vanilla and mix well
6. Drop by tbsp on prepared sheets. Bake for 10 mins
7. In large bowl beat egg whites until stiff. Add the remaining 1 1/4 cups shortening and 1 tbsp vanilla and mix well.
8. Add the milk and sugar and beat until smooth
9. Assemble cookies and filling
