Ingredients

  • 1 1/4 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/4 cup melted butter
  • 1/2 tsp cinnamon
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 3 medium eggs
  • 3/4 tsp vanilla
  • 1 pint sour cream
  • 1/4 cup sugar
  • 1 tsp vanilla

Preparation

Step 1

1. Combine graham crackers, sugar, butter, cinnamon and press around bottom and sides of greased 9 or 10" spring form pan. Refrigerate.

2. To make the filling, Place eggs and sugar in mixer bowl and beat until smooth. Add cheese and vanilla and beat again until smooth. Pour into crust and bake at 375F for 20-30 mins. Cool on rack for 15 mins. Raise temperature of oven to 475F.

3. To make topping, mix sour cream, sugar and vanilla only until well blended. Pour over cheese filling and spread gently and evenly. Place in oven for 10 mins.

4. Let stand at room temperature for 6 hours on a cake rack. Loosen round sides of cake with knife and unmold. Cover and refrigerate at least 12 hours. This cake will be about 1 1/4 inches high when ready to serve so don't think you make a mistake, Top with pie filling or fruit ,if desired.
