Ingredients
- Provolone (Wisconsin Provo-Nello), 2 oz.
- Bacon Bread (Jim Lahey method)
- Cashew-lemon pesto
- tomato, thickly sliced
- sea salt
- coarse black pepper
- olive oil

Preparation
Step 1
Grate cheese. On bread, layer half of the grated cheese, a layer of pesto, tomato slices, the rest of the grated provolone and lots of coarsely grated pepper.
Fry in olive oil in a non-stick skillet over medium heat until the cheese melts, and sandwich is heated all the way through. Monitor heat so that the bread doesn't get too brown before the ingredients heat and melt together.
Remove from heat, and sprinkle with sea salt.
