Ingredients

  • Focaccia, garlic-rosemary bread or sun-dried tomato bread are savory alternatives to the Italian bread.
  • 2 garlic cloves, minced
  • 4 boneless skinless chicken breast halves
  • 1/2 teaspoon dried Italian seasoning
  • Olive oil-flavored cooking spray
  • 4 (3x2-inch) slices mozzarella cheese (2 oz.)
  • 8 slices Italian bread (1 inch)
  • 1/2 cup oil-packed sun-dried tomato halves, drained, rinsed
  • 1/4 cup chopped fresh basil

Preparation

Step 1

1. Heat broiler. Line 15x10x1-inch baking sheet with foil. Rub garlic over chicken; sprinkle with Italian seasoning. Lightly spray chicken with cooking spray; place on lined baking sheet.

2. Broil chicken 8 to 10 minutes or until no longer pink in center and juices run clear. Top each breast with 1 slice cheese; broil until cheese is melted. Remove chicken from baking sheet.

3. Spray both sides of each bread slice with cooking spray; place bread on baking sheet. Broil 30 to 60 seconds or until lightly browned, turning once.

4. Top chicken breasts with sun-dried tomatoes and basil; serve between bread slices.
