Ingredients

  • 2 cups flour
  • 1 cup (4 oz) shredded swiss cheese
  • 1 tea. sugar
  • 1 tea. salt
  • 1/2 tea. ground mustard
  • 1/8 to 1/4 tea. cayenne pepper
  • 1/2 cup plus 2 Tbsp. cold butter
  • 9 Tbsp. dry white wine or chicken broth
  • 1 egg, lightly beaten
  • sesame and/or poppy seeds

Step 1

In a bowl, combine the first six ingredients, cut in butter until the mixture resembles coarse crumbs. Gradually add wine or broth, tossing with a fork until dough forms a ball.

On a lightly floured surface, roll out dough to 1/8" thickness. Cut with floured 2" cookie cutters. Place 1" apart on ungreased baking sheets.

Brush tops with egg; sprinkle with sesame and/or poppy seeds.

Bake at 400 degrees for 10-12 minutes or until lightly browned. Remove to wire racks to cool.

Yield: 6 dozen
