Ingredients
- 1/3 cup vegetable oil
- 1/3 cup water
- 1/3 cup lime juice
- 1 (1.25-oz.) envelope taco seasoning mix
- 6 (6-oz.) boneless skinless chicken breast halves
- 1 cup salsa
- 1 (15-oz.) can black beans, drained and rinsed; or equivalent homemade
- 1 cup frozen whole kernel corn
- Low fat sour cream, for garnish (optional)
- Shredded low fat Cheddar cheese, for garnish (optional)
- Diced avocado, for garnish (optional)

Step 1
In a medium bowl, whisk together oil, water, lime juice and taco seasoning mix; transfer to a large zipper-topped plastic bag; add chicken, seal bag and turn to coat; refrigerate for 30 minutes. Meanwhile, place salsa, black beans and corn in a saucepan over medium heat; cook and stir until corn is tender, about 5 minutes. Preheat grill or oven broiler. Remove chicken from marinade; discard marinade. Grill or broil chicken for 7 minutes per side or until juices run clear. Serve chicken with salsa mixture and garnish with sour cream, cheese and avocado if desired.
SERVING SUGGESTION: Brown rice and a big salad.
