Ingredients

  • 1 3/4 cups flour
  • 1/2 tsp each bkg powder and bkg soda
  • 1/4 tsp salt
  • 1/2 cup butter
  • 1 cup sugar
  • 1/2 cup mini chocolate chips
  • 3/4 cup coconut
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 tsp almond extract

Step 1

Sift dry ingredients. Cream the butter and sugar. Add the eggs and then the flavorings. Add the flour and then the coconut and chips. Refrigerate for at least one hour.
Preheat the oven to 350*
Divide dough in half and form into logs. Place on a cookie sheet. Press down gently with damp hands, sprinkle with sanding sugar.
Bake for 30 minutes.
Now transfer the logs to a cutting board. Cut them with a serrated knife at about 3/4 inches. I do it at an angle.
Bake them for 15 minutes.
Can be dipped with chocolate.
