Ingredients

  • 4 oz. prosciutto
  • 2 tbsp olive oil
  • 3 garlic cloves, sliced
  • 1 tbsp tomato paste
  • 1 c pasta cooking water
  • 1/4 c heavy cream
  • 1 lb cooked ravioli
  • 1 c blanched frozen peas
  • Chopped parsley and grated parmesan for garnish

Preparation

Step 1

Cook prosciutto in a skillet with olive oil over medium heat until crisp, about 4 mins. Stir in garlic and tomato paste; cook 1 min. Ladle in pasta water and simmer until reduced by half, 4 mins. Add heavy cream and simmer until thickened, 3 mins. Toss with ravioli and peas. Top with parsley and parmesan cheese.
