Banana Walnut Pancakes

Ingredients
- 1 cup flour
- 2 tbsp. sugar
- 2-1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/2 tsp. salt
- 3/4 cup milk
- 3 tbsp. unsalted butter, melted
- 1 large egg, lightly beaten
- 1 over ripe banana, mashed (about 1/2 cup)
- 1/2 cup chopped walnuts
- vegetable oil

Step 1
In bowl, combine flour, sugar, baking powder, baking soda and salt. Add milk, butter, egg and mashed banana and stir until flour is moistened. Fold in walnuts. Warm griddle or skillet over medium heat. Pour batter by 3/4 cups onto hot griddle. Cook until tops are bubbly. Flip and cook until underside is golden. Transfer to a platter and keep warm. Repeat with remaining batter. Serve topped with butter, maple syrup, more walnuts an banana slices if desired.
