- 1 large bell pepper with a flat bottom
- Can of black beans
- 2 cups of corn
- 1/2 red pepper
- 1/4 cup of any roasted red pepper & tomato soup
- Parmesan cheese
- White rice

Step 1
1. Cook any amount of white rice, seasoning to your preferences.
2. Heat oven to 450.
3. Heat black beans, rinse and drain.
4. Heat corn, drain extra water.
5. Dice the half red pepper and set aside.
6. Combine beans, corn and pepper.
7. Cut off top of large pepper, remove seeds and rinse.
8. Add desired amount of rice, corn, beans, peppers.
9. Pour as much soup inside pepper as you can. Use a fork to create little holes if necessary.
10. Sprinkle with Parmesan cheese.
11. Place in a baking and put in oven for 15 minutes or so until hot. Watch that nothing drips down into the bottom of the oven.
12. Place leftover rice, beans, corn, pepper in containers to save for another meal!
