Bean and Avocado Quesadilla

  • 2 whole wheat tortillas
  • 1/2 cup black bean and carrot mash
  • 1 ripe avocado
  • 1/4 cup shredded cheese
  • 1 tsp canola oil
  • salsa if desired

Preparation

Step 1

1. Spread 1 tortilla with thin layer of black bean and carrot mash.
2. Cut avocado and scrape out insides. Mash with fork.
3. Add avocado layer on top of black bean layer.
4. Sprinkle cheese on top of this layer and top with second tortilla.
5. In medium sauce pan, heat oil. Place quesadilla in skillet. Heat until cheese begins to melt. Flip and cook to golden brown. Remove form heat and cut into 8 triangles.
6. Top with salsa if desired.
