Ingredients
- 12 tbls unsalted butter
- 4 lbs russet potatoes cut into 1/2” pieces
- 12 cloves minced garlic
- 1 tsp sugar
- 1/2 c. water
- 1 1/2 c. half and half
- 3/4 tsp salt

Preparation
Step 1
Cut potatoes into ½” pieces and rinse under cold water until the water runs clear, drain thoroughly.
Put 4 tbls. unsalted butter in pot and turn heat to medium, melt butter.
Stir garlic in with melted butter, add sugar. Cook medium to medium low heat and cook until straw colored (3 or 4 minutes).
Add water, 1 ¼ c. half and half, and salt.
Add potatoes to pot, toss in garlic liquid. Simmer, cover, reduce heat to low.
Cook 25-30 minutes. Stir periodically.
Add 8 tbls butter and mash. Fold in ¼ c. half and half, serve.
