Filipino Chicken Adobo

Ingredients
- 2 to 3 lbs. pork, cut into 1-1/2 inch cubes
- (country ribs work well)
- 1 cup soy sauce
- 1 cup red wine vinegar
- 1 head (not clove) of garlic, peeled and crushed
- ground pepper, to taste
- vegetable oil

Method:
Combine soy sauce, red wine vinegar, garlic and pepper.
Place pork in non-reactive bowl. Pour marinade mixture over the meat. Cover and refrigerate over-night.
Put meat and marinade in a covered frying pan; simmer at low heat. Turn every 15-20 minutes, to ensure even cooking. When marinade is totally absorbed, test meat for tenderness. If more simmering is needed, add a cup or more of water.
When meat is tender, add a little vegetable oil and brown the adobo a bit more.
Serve over steamed white rice.
Note: this recipe also works well with cut-up chicken nuggets, preferably bone-in.
