Ingredients

  • 6 cups air-popped popcorn
  • 1/2 cup dried apricots
  • 1/8 cup peanut butter
  • 1 tablespoon maple syrup
  • 1 tablespoon coconut oil melted
  • 1/8 cup plant-based milk
  • 1 tablespoon flaxseed
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon vanilla
  • 1/8 teaspoon sea salt

Preparation

Step 1

Line a baking sheet with parchment paper and set aside. Add all ingredients except popcorn to a large blender or food processor and pulse until a paste forms. In a large mixing bowl, add popcorn and pour mixture over it, mixing roughly with hands – crushing the kernels slightly is ok. With oiled hands, create 12 small balls and place onto the prepared baking pan. Place popcorn balls in the fridge to set. Store in fridge for 1 week.
