Ingredients

  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 eggs, lightly beaten
  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Preparation

Step 1

1.Preheat the oven to 350 degrees F.

2.Place the oil in a large bowl. Gradually add the sugar while beating lightly. Add the eggs and continue beating. Add the mashed bananas and beat just until moistened. Set aside.

3.In a separate bowl, combine the flour, baking soda, baking powder, and salt. Add the dry mixture to the banana mixture and beat just until moistened. Add the milk and vanilla extract and continue beating just until mixed.

4.Pour the mixture into a greased and floured 9" x 5" loaf pan and bake for 50 to 60 minutes or until a wooden toothpick inserted in the center comes out clean. Let cool in the pan on a wire rack for about 10 minutes. Turn out onto the rack and cool completely.
