Old Fashioned Meat Loaf

    tsp. olive oil

  • 1

    c. finely chopped onion

  • 4

    cloves garlic, minced

  • lbs. extra-lean ground beef

  • ¾

    c. old-fashioned oats

  • 2

    egg whites

  • 1

    c. chili sauce, divided

  • ½

    tsp. black pepper

  • ¼

    tsp. salt

  • 1

    tbsp. Dijon mustard


Preheat oven to 375. Heat oil in large nonstick skillet over med. heat. Add onion, cook and stir 5 mins. Add garlic; cook 1 minute. Remove from heat and let cool 5 mins. Add beef, oats, egg whites, 1/2 c. chili sauce, pepper & salt, if desired; mix well. Pack into 9 x 5 loaf pan. Combine remaining 1/2 c. chili sauce and mustard in small bowl; spoon evenly over top of meatloaf. Bake 45-50 mins. or till internal temp. reaches 160. Let stand 5 mins. Pour off any juices from pan. Cut into slices to serve.
