Butterscotch Pudding with Creme Fraiche Topping

Ingredients
- 1 cup packed light brown sugar
- 1/4 cup cornstarch
- 1/4 tsp salt
- 4 cups half and half or light cream
- 4 egg yolks, lightly beaten
- 1/4 cup butter, cut into small pieces
- 2 tsp vanilla
- Toffee pieces, chopped, optional
- 1/2 cup crème fraiche
- 2 tbsp soft goat cheese (chevre)
- 1 tbsp sugar

Preparation
Step 1
1. In medium pan, mix brown sugar, cornstarch and salt. Stir in half land half. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 2 mins more.
2. Remove form heat. Gradually stir about 1 cup of the hot mixture into egg yolks. Return egg yolk mixture to half and half mixture in pan. Bring to gently boil; reduce heat. Cook and stir for 2 mins.
3. Remove form heat. Stir in butter and vanilla. Pour pudding into a large bowl. Cover with plastic wrap. Chill for 4 to 5 hours or until completely chilled.
4. Serve pudding with Crème Fraiche Topping. If desired, sprinkle with toffee pieces. Crème Fraiche Topping: In small bowl, mix 1/2 cup crème fraiche, 2 tbsp soft goat cheese (chevre) and 1 tbsp sugar.
