Ingredients
- 2 cups all purpose flour
- 2 t baking powder
- 1 1/2 t baking soda
- 1 t salt
- 2 1/2 t cinnamon
- 2 cups sugar
- 1 1/2 cup oil
- 4 large eggs
- 2 3/4 cups grated carrot
- 1 x 8 oz. can crushed pineapple, drained
- 1 3/4 cups shredded coconut
- 3/4 cup chopped walnuts or pecans
- ICING
- 1 x 8 oz. cream cheese
- 1 stick unsalted butter, room temp.
- 1 box powdered sugar
- 1 t vanilla

Step 1
Grease & flour 3 9" cake pans and preheat oven to 350.
Mix flour, baking powder, baking soda, salt and cinnamon in a bowl, set aside. In mixing bowl stir together sugar, oil and eggs. Add dry ingredients and mix. As batter is coming together, add pineapple, coconut and nuts. Do not overmix. Divide into pans and bake for 35-45 min. Cool and frost.
Icing:
Mix together ingredients until smooth. Enough icing to ice each layer as well as the top, but not the sides. Can make more if needed for sides, but is a very rich cake, so not needed.
