Ingredients

  • SAUCE:
  • 2 beaten eggs
  • 3/4 cup soft bread crumbs
  • 1/3 cup finely chopped onion
  • 1/4 cup finely chopped green pepper
  • 4 cloves crushed garlic
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. oregano
  • 1/2 tsp. thyme
  • 1 tsp. Worcestershire sauce
  • 1 lb. ground beef
  • 4 eggs, hard boile
  • 1/2 cup ketchup
  • 1 small can of tomato paste
  • 2 tbsp water
  • 1 tsp vinegar
  • 4 shakes Worcestershire sauce
  • 4 shakes red hot
  • seasoning to taste
  • shredded cheese

Step 1

Peel and roll the hard boiled eggs in flour and set aside.

Combine beaten egg, breadcrumbs, onion, garlic, green pepper, spices and Worcestershire sauce. Add ground beef; mix well. Shape ¼ of meat mix around each hard-boiled egg, completely enclosing the egg.

Arrange meat loaves in 8x8x2” baking pan. Bake at 350 degrees for 30 minutes. Drain off excess fat. If desired, loaves can be frozen at this point.

For sauce, combine ketchup, tomato paste, water, vinegar, spices, in a bowl and pour over loaves. Bake at 350 degrees for 15 minutes more. Alternatively, use your favorite can of prepared tomato/spaghetti sauce.

If preparing from frozen loaves, thaw, add sauce and allow 30 minutes in 350 oven.

If desired, top each with shredded cheese. Return to oven and heat until cheese melts
