Fruit and Nut Refrigerator Cookies

Of all the cookies I make, this one is my personal favorite. Loaded with fruit, pecans and almonds with a hint of cinnamon and cloves...a perfect Christmas cookie!

Ingredients
- 2 1/2 cups flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/4 tsp. ground cloves
- 1/2 tsp. cinnamon
- 1/2 cup shortening (Crisco)
- 1/2 cup butter
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 2 eggs
- 1 tsp. vanilla
- 1/3 cup chopped pecans or walnuts
- 1 cup chopped mixed candied fruit or chopped mixed glace cherries.
- 1/4 cup sliced almonds

Step 1
Combine the flour, baking powder, baking soda, salt, cloves and cinnamon and set aside.
Cream the shortening, butter and sugars until smooth and creamy. Add the eggs and vanilla and mix well. Stir the flour mixture into the creamed mixture (use a wooden spoon to do this-using a mixer will cause the cookie to be tougher in the end). Once the flour is incorporated, stir in the fruit and nuts.
Chill the dough for a few minutes (or longer) so that it is easier to handle. Shape the chilled dough into 2 logs about 1 1/2 inches in diameter each. Wrap the logs well and refrigerate overnight.
Using a sharp knife, slice the logs into 1/4-inch slices and place on an ungreased cookie sheet. Bake at 375 degrees F. for 8-10 minutes.
