  • 1 1/2 lb. fresh pumpkin (or squash), seeds and fibers removed, peeled, cut into 1" wedges (about 3 cups)
  • 2 Tbsp. olive oil
  • 1 Tbsp. balsamic vinegar
  • 1 tea. oregano
  • 1/2 tea. salt
  • pepper
  • for added flavor: add some rosemary, sage or thyme to the oil mixture

Toss the pumpkin chunks with the oil, vinegar, oregano, salt and pepper. spread the pumpkin on the grill, reduce the heat to medium, and cook the wedges about 5 minutes on each side, or until easily pierced with a fork.
