Ingredients
- 3/4 pound ground turkey
- 1 medium onion, chopped
- 1 medium green bell pepper, seeded, deribbbed and chopped
- 1 clove garlic, minced
- 1 (15-oz.) can vegetarian refried beans
- 1 (4-oz.) can diced green chilies
- 1 cup picante sauce
- 3/4 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon sea salt
- 1/8 teaspoon cayenne pepper
- 3/4 cup shredded low fat Monterey Jack cheese
- 6 (8-inch) whole wheat flour tortillas, warmed

Step 1
In a large non-stick skillet over medium-high heat, brown ground turkey, onion, bell pepper and garlic; add beans, diced green chilies, picante sauce and spices; simmer for 10 minutes then let cook for a while, until mixture is a little firmer. Place a large spoonful of turkey mixture down the center of each warmed tortilla; top with some cheese and wrap.
SERVING SUGGESTION: Corn on the cob and a relish tray of cherry tomatoes, sugar snap peas and whole black olives.
