Ingredients
- 1 1/2 lb chicken breasts, cubed
- salt and pepper
- 2 Tbls olive oil
- 2 Tbls butter
- 3/4 cup chopped onion
- 1 lb sliced mushrooms
- 2 Tbls minced garlic
- 1 cup dry marsala wine
- 8 oz mascarpone cheese
- 2 Tbls dijon mustard
- 12 oz fettuccine

Preparation
Step 1
Sprinkle chicken with salt and pepper. Heat the oil in a large skillet. Add the chicken and cook just until brown, about 4 min per side. Transfer to plate and keep warm.
Melt 2 Tbls of butter in same skillet, add onion and saute until tender. Add mushrooms and garlic and saute until the mushrooms are tender and the juices evaporate, about 12 minutes. Add the wine and simmer until it is reduced by half, about 4 minutes. Stir in mascarpone and mustard. Heat through, add chicken.
Meanwhile, bring a large post of water to boil, add fetteuccine and cook until done.
