Ingredients

  • 2 1/2 cups flour
  • 2/3 cup sugar
  • 1 tsp. cardamom
  • 1 cup crushed pineapple, drained
  • 3 T. water, 3 T. oil, 2 tsp baking powder, mixed together
  • 1/2 cup pineapple juice
  • 1/2 cup milk-free margarine, melted

Step 1

Preheat oven to 350F. Grease and flour 9x5x3-inch loaf pan. Set aside. In large bowl, mix together flour, sugar, cardamom, and pineapple. Add remaining ingredients. Beat will. Pour mixture into prepared pan and bake for 45 to 60 minutes, or until a toothpick inserted in center comes out clean. Cool on wire rack for 5 minutes; remove from pan and allow to cool completely before serving.
