Ingredients

  • 3 1/2 cup all-purpose flour
  • 3 cup whole wheat flour
  • 2 1/2 cup lukewarm water
  • 1/3 cup shortening (butter flavored)
  • 1/3 cup instant nonfat dry milk
  • 2 pkg active dry yeast (2 tbsp to make 2 pkgs)
  • 1/4 cup honey
  • 1 tsp salt

Step 1

1. Measure all-purpose flour and whole wheat flour into a bowl. Stir to mix. Combine warm water, shorting, dry milk, yeast, honey, salt, and 3 cups of flour mixture in largest mixer bowl. Mix on low speed, scraping sides and bottom of bowl often. Beat 3 mins at medium speed. Gradully stir in remaining flour by hand to make a very stiff dough.

2. Cover and let rise 1 hour. Then knead dough on floured surface 1-2 mins or until smooth.
Divide dough in half. Roll into 2 rectangles with rolling pin. Starting with the 6" side, roll up tightly, jelly-roll fashion. Seal edges and ends. Place seam side down in greased 9x5x3" loaf pans. Cover and let rise in warm place until doubled, 1-1 1/2 hours.

Bake at 400F for 30-35 mins. Remove from pans immediately. Cool on wire rack.
