Preparation

Step 1

In a small saucepan, bring the water to a boil. Add the oats and reduce the heat to low. Cook for about 25 minutes, stirring occasionally.

Add the remaining ingredients. Cook for 5 more minutes.

Variation 1: Instead of dried cranberries, try any other dried fruit (cherries, raisins, chopped apricots, etc.)

Variation 2: Instead of soy milk, try any other plain or flavored milk (such as low-fat, coconut, almond, etc.)

Variation 3: Instead of almonds, try any other chopped nut (walnuts, cashews, etc.)

Variation 4: Instead of maple syrup, try any other liquid sweetener.

Variation 5: Instead of vanilla extract, try any other extract (almond, orange, etc.)

Variation 6: Instead of stovetop, try cooking in the microwave. Combine the water and oats, cover with plastic wrap or a paper towel, and cook on 50% power. Be sure you put the oatmeal in a large glass bowl or 8-cup glass measure so that it doesn't boil over. It needs plenty of space. After it cooks, stir in the remaining ingredients and let it sit for 2 minutes.
