Ingredients
- 2 pounds baby potatoes (new Yukon Gold, red or white work well)
- 5-6 garlic gloves (peeled)
- 1 1/2 tablespoons olive oil
- 1 teaspoon dried rosemary
- 1 teaspoon black pepper
- 1/2 teaspoon salt (sea salt is ideal)
- 1 pinch dried thyme

Step 1
Spray a 4 to 6 quart crock pot with non-stick cooking spray. Place the potatoes and garlic in the pot and mix well.
Drizzle with the olive oil and sprinkle with the rosemary, pepper, salt, and thyme.
With a spoon or your hands, toss the potatoes and garlic to coat them lightly with the oil and herbs.
Spread out the potatoes as evenly as possible.
Cover and cook on High until the potatoes are tender when pierced with a sharp knife, 2 1/2 to 3 1/2 hours.
Serve immediately.
