Ingredients

  • 3 small poblano chiles or pasilla peppers
  • 1/2 lb. chorizo
  • 1 cup chopped green onions
  • 1/4 cup chopped green bell pepper
  • 1 large tomato, chopped
  • 1/4 tea. salt
  • 2 cans pinto beans, drained
  • 1/2 cup Monterey Jack cheese, shredded
  • 1/2 cup Cheddar cheese, shredded

Preparation

Step 1

Turn on broiler. Place chiles on a foil lined cookie sheet and roast chiles for about 12-17 minutes, until evenly browned and blistered (not burnt). Place chiles in a plastic bag for about 20 minutes. Remove from bag, peel, remove seeds and chop into 1/4" pieces.

Brown sausage, onions, and bell peppers in a skillet over medium heat. Drain off the excress grease, add remaining ingredients; mix well.

Place into a 2 qt. baking dish and cover.

Bake at 350 degrees for about 30 minutes or until hot and bubbly.

Top with shredded cheeses and place back into the oven for 5 minutes to melt the cheese.
