Ingredients
- 1 onion chopped
- 1/3 cup chopped bell pepper
- 1/2 stick butter
- 1 (15-ounce)can creamed corn
- 1 (15-ounce)can shoepeg corn
- 1 (11-ounce)can whole-kernal corn
- 1/2 teaspoon sugar
- 1/2 teaspoon white pepper
- 1/2 teaspoon salt, or to taste
- 3 ounces cream cheese, chunked
- 2 eggs beaten
- 1/2 cup sour cream
- 30 Ritz Crackers, crushed, divided
- Spray butter

Preparation
Step 1
In saute pan, saute onion and pepper in butter. Add corn, seasonings, and cream cheese;heat until cream cheese is melted. Take off fire and add beaten eggs, sour cream, and half the cracker crumbs. Refrigerate now, if making ahead.
Allow casserole to come to room temperature before baking. Sprinkle remaining crumbs over top and spray generously with spray butter. Bake at 350F about 20-30 minutes until browned on top.
