  • 1 large tin of cashews (approximately 3 cups)
  • 2 egg whites
  • 1 cup sugar
  • 1 tablespoon baking cocoa
  • Sea salt softened butter to coat the pan (about a teaspoon)

Step 1

Pre-heat oven to 350 degrees. Use softened butter to coat a rimmed baking sheet (9” x 11” works great), making sure to coat sides. Beat eggs and whisk in sugar for about 2 minutes. Whisk in cocoa and fold in nuts. Pour mixture onto buttered baking sheet and smooth into an even layer. Bake for 10 minutes, toss, and bake for another 10 minutes. Remove from the oven and sprinkle with pinches of sea salt to taste. Break up into chunks and allow to cool.
