- 2 cups water
- 2 tablespoons olive oil divided
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup uncooked long grain rice
- 1/4 cup chopped fresh cilantro
- 1 teaspoon grated lime peel
- 2 tablespoons lime juice
- 1 tablespoon taco seasoning
- Four boneless skinless chicken breast 4 ounces each
- Optional toppings: Pico to Gallo shredded cheese sour cream

Step 1
