Ingredients

  • 1 can diced tomatoes/ chiles
  • 1 can nacho cheese soup
  • 1 can re-fried beans
  • 1/2 container of sour cream
  • 1 pkg. cream cheese
  • 6 tortillas
  • 4-6 small pcs. boiled chicken breasts
  • 1/2 pkg. shredded cheese

Step 1

Boil chicken breast approximately 30 mins. on med-high till cooked through. Wait till done, then as it cools, begin to prepare sauce. On low to low-med. heat, mix the can of tomatoes, sour cream, cream cheese, and nacho cheese soup, stirring frequently till cream cheese is melted and sauce is just warmed.

Heat tortillas in bag for 30 seconds in microwave. Cut up chicken, shredding as you cut. Spread out tortillas in baking dish. Place handful of chicken in each tortilla, then spread spoonfuls of re-fried beans on top, then sauce (leaving some for on top), then shredded cheese. Close tortillas and roll opening to bottom of pan. Spread remaining sauce and a handful of cheese on top. Bake at 400 for 20 minutes (quick bake setting) or 425 for 30 minutes regular setting.
