Apple Pie Cupcakes with Cinnamon Buttercream

These cupcakes are always a hit! They are so easy to make and the flavor jut screams fall--of course, their just as delicious any time of year.

Ingredients
- Frosting:
- 1 pkg. Yellow cake mix
- 2 tbsp. butter
- 4 medium tart apples, peeled and finely chopped (about 4 cups)
- 3/4 cup packed brown sugar
- 1 tbsp. cornstarch
- 1 tbsp. water
- 1 cup butter, softened
- 3 cups confectioner's sugar
- 2 tbsp. heavy whipping cream
- 1 tsp. vanilla extract
- 1 1/2 tsp. ground cinnamon
- Thinly sliced apples, optional

Step 1
1. Prepare and bake cake mix according to package directions for cupcakes.
2. In a large skillet, heat butter over medium heat. Add Apples and brown sugar; cook and stir until apples are tender, 10 - 12 minutes or, in a small bowl, mix cornstarch and water until smooth, stir into pan. Bring to a boil, cook and stir until thickened, 1 - 2 minutes or, remove from heatk, cool completely.
3. Using a paring knife, cut a 1-inch wide cone shaped piece from the top of each cupcake, discard removed portion, fill cavity with apple mixture.
