Ingredients
- 4 oz. flour
- pinch of salt
- 2 eggs
- 1 cup milk or water
- roast drippings

Method:
Pre-heat oven to 450˚F.
Sift the flour and salt together in a mixing bowl. Make a well in the center of the flour.
Add the eggs, then gradually add the milk. Beat thoroughly until batter is like thick cream. Beat the batter until it is a mass of bubbles. Allow batter to rest in a COOL place for at least one hour.
Put 2 T drippings into an 8x10 inch baking dish and place in pre-heated oven. Heat until fat is smoking; pour batter into hot pan and bake in the center of the oven for approximately 30 minutes, or until puffed and brown. Enjoy!
