Ingredients
- medium shrimp. Creole seasoning:
- 4 oz chicken. 1 tblsp thyme
- 1 tblsp creole seasoning. 2 1/2 tblsp paprik
- 2 tblsp olive oil. 2 tblsp salt
- 1/2 cup chopped onion. 2 tblsp garlic pwdr
- 1/2 cup chopped celery. 1 tblsp pepper
- 1/2 cup green bell pepper. 1 tblsp onion pwdr
- 1/2 cup red bell. 1 tblsp cayenne
- 2 tblsp chopped garlic. 1 tblsp oregano
- 1/2 cup chopped tomatoes
- 3 bay leaves
- 1 tsp worcestershire sauce
- 1 tsp hot sauce
- 3/4 cup rice
- 3 cups chicken stock
- 5 oz andoulle sausage, sliced
- 1/2 cup chopped ham
- Salt and pepper

Step 1
Combine the shrimp, chicken, ham, and sausage with the creole seasoning and set aside. Heat oil in a large heavy skillet over mh heat. Add the veg and cook for 3-5 minutes. Add garlic, tomatoes, bay leaves, Worcestershire sauce, and hot sauce. Stir in rice and slowly add broth. Reduce heat to medium and cook for about 15 minutes. When rice is tender add the meats and cook till done. Check for seasonings.
