Ingredients

  • 1/2 c unsalted butter, melted
  • 1 cup all purpose flour
  • 2 cups sugar
  • 3 teaspoons baking powder
  • pinch salt
  • 1 cup milk
  • 4-6 cups fruit
  • 1 tablespoon fresh lemon juice
  • cinnamon and/or nutmeg depending on fruit

Step 1

Preheat oven to 375 degrees

Pour melted butter into 13 x 9 x 2 inch baking dish

In med bowl combine the flour, 1 cup sugar, baking powder, salt and mix well. Stir in milk, mixing until just combined. Pour this batter over the butter but do not stir them together.

In sauce pan combine fruit, lemon juice, and remaining cup of sugar and bring to boil over high heat, stirring constantly. Pour mixture over the batter but do not stir together. I take an additional cup or so of the fruit that has not been cooked and add in. Sprinkle with cinnamon or nutmeg if matches with the fruit. Peaches, apples...

Bake in preheated oven for 40-45 minutes until golden-brown. Serve warm or cold.
