Sicilian Cake with Chocolate Frosting

Ingredients
- Filling:
- Make or purchase a 9x3 inch pound cake
- 1 lb. ricotta cheese
- 2 tbsp heavy cream
- 1/4 cup sugar
- 3 tbsp orange flavored liqueur
- 1 1/2 tbsp candied red cherries, chopped
- 1 1/2 tbsp candied green cherries, chopped
- 2 oz semisweet chocolate coarsely chopped
- Frosting:
- 12 oz semisweet chocolate
- 3/4 cup coffee, black
- 1/2 lb. unsalted butter, cut up

Step 1
1. Trim ends from cake and level top. Slice cake horizontally into 4 layers.
2. Filling: Strain ricotta, if needed. Beat smooth. Beat in cream, sugar, and liqueur. Fold in cherries and chocolate. Spread filling between cake layers. Gently press loaf together. Chill 2 hours.
3. Frosting: Melt chocolate with coffee. Beat in cold butter, one piece at a time. Beat until smooth. Chill until frosting is of spreading consistency. Reserve 3/4 cup of frosting and spread remainder on top and sides of cake. Use a pastry bag and tip to decorate cake with reserved frosting. Cover loosely. Refrigerate at least 24 hours before serving.
