Ingredients
- 1 lb. mushrooms (sliced)
- 1 medium onion (diced)
- 2 tbsp. butter
- 1 1/4 sticks butter
- 3 cups heavy cream
- 6-8 plum tomatoes (puree in food processor)
- 1 small can tomato paste
- 1/2 cup vodka
- 3/4 cup grated pecorino cheese
- 3 tsp fresh chopped parslay
- dash o chili powder
- up to 2 lbs penne pasta

Step 1
In skillet saute mushrooms and onions in 2 tbsps. melted butter. Cook until all liquid is gone.
Melt 1 1/4 sticks butter, add cream, plum tomatoes, tomato paste, mushrooms and onions, bring to a slow boil, and then simmer for 12 minutes.
Add vodka, cheese, parslay, and chili powder- simmer this for 5 minutes.
Serve over penne pasta with some sauce on the side.
