Orange oatmeal lace cookies

These are very tasty and elegant looking. Great for holiday cookie platters and for light dessert.

Ingredients

• 8 tblsp melted butter
• 1/2 cup almond, chopped fine
• 1/2 cup oatmeal
• 1 cup sugar
• 1 egg
• 2 tblsp grated orange rind
• 1 tblsp orange juice
• 1 tsp vanilla
• 1/2 tsp cinnamon
• 1/2 tsp salt
• 1 drop orange oil,or extract

Step 1

Mix all the ingredients together with the butter last and mix well. Drop by only 1 tablespoon at a time because they spread. 6 to a sheet and use a silpat. Bake @ 350* for 8 minutes and do not let them get too brown. Remove carefully.
