Lemon.Jelly

This is a very different and lovely jelly. Use it as a glaze, and try it on a scone.

Ingredients
- 4 lemons, or 3/4 cup fresh lemon juice
- 1 1/2 cup water
- 4 1/4 cup sugar
- 1/2 pkg liquid pectin
- 1 tblsp lemon peel

Cooking time 55mins

Step 1
Combine juice, peel, and water and cook for 10 minutes, or measures 2 cups. Then add the sugar, bring the mixture to boil add the pectin and boil 1 minute. Put up in jars.
