Ingredients

  • 3 tablespoons lime juice
  • 3 tablespoons rice vinegar
  • 2 tablespoons fish sauce
  • 1 tablespoon water
  • 1 tablespoon creamy peanut butter
  • 1 teaspoon chili paste with garlic
  • 1 clove garlic, minced
  • 6 cups shredded napa cabbage
  • 2 cups shredded red cabbage
  • 1 cup red bell pepper strips
  • 1 cup shredded carrots
  • 2 tablespoons chopped dry-roasted peanuts
  • 1 tablespoon cilantro
  • 1 tablespoon chopped mint

Preparation

Step 1

1. COmbine lime juice-garlic. Add cabbage-carrot. Toss to coat. Marinate in fridge 1 hour.

2. Stir in nuts-mint just before serving.

Notes: Easy and David really liked this. I thought it was just so-so.
